Introducing The Minus Times: Bavarian Style Doppelbock, the latest in our series of explorative lagers.
Dating back to the Middle Ages, the Doppelbock is a style with a rich history. Known for being a stronger, darker iteration on the Bock, our take doesn’t stray far from the traditional qualities found in the Monastic Bavarian lagers of yesteryear. In terms of ingredients, the key element in this style is the malt, which contributes largely to the flavor profile of our Dopplebock. We utilized a Munich malt base and accompanying specialty grains, yielding a rich and malt forward palate devoid of overly sweet characteristics. Notes of black coffee can be found up front along with baker’s chocolate, interwoven with a subtle hint of plum. Finishing at 7.8% abv, this release of The Minus Times was brewed in the spirit of the changing season, as Doppelbocks are typically brewed in the winter months.

Reviewed from notes.
Can to tall tulip.
Appearance: dark brown color with a finger's worth of eggshell white foamy head which dissipated nicely to leave some light lace
Aroma: dark bread, dark fruits, subtle notes of black coffee, cocoa powder and crisp sweet earthiness
Flavor: meshes the prior noted aromas to a mighty fine sweet malty and dark fruity quality; finishes the same with a light touch of dryness
Texture: medium bodied, slightly sessionable; even keeled smoothness to the dryness (that coffee note I had earlier makes me wonder if that's what's making this beer a bit drier than expected....hmmmm...)
Overall: pretty nicely done Doppelbock even if it is a bit drier than expected.

Can (12/13/23) from The Beer Store, Salem. Virtually opaque dark brown w/mahogany, nice sparkle, head with poor retention and trace lacing. Aroma is strong brown bread, earthy roasted malt, hint of soy. Taste is strong brown bread, raisin, fig, earthy roasted malt, hint of soy. Creamy texture, soft carbonation and finish as taste. Good strength and decent complexity for style.

Pours mahogany tinged dark brown into a stem glass. Mocha head with good retention recedes to coat surface. Raisin, licorice and chocolate aromas. Soft with sweet licorice, chocolate covered raisins, prunes, and soy front to back. Hot lasting fig and chocolate finish. Becomes a bit cloying as it warms...

16 oz can. A good amount of flavor here. Raisin, earthy malt, and some roasted barley notes. Ends with caramel and prune. It has an awful lot of roasted dark malts for the style. So it isn’t correct BUT…. It still tastes pretty good!

Canned 12/13/23, drunk 2/8/24. Clear, dark cocoa-hazelnut. Small, tan head quickly to ring. A bit heavy on the coffee and the char. Roasty, toasty, hazelnut and vanilla with dark chocolate. How about some caramel and base malt?? Cocoa, ash, roast and toast up front leading to vanilla, licorice and more heavy toast. Is this a strong schwarzbier?! Is it a frickin' American stout? Might as well be. This is about as doppelbock-like as my elbow. Bready, chalky, over-roasted/toasted finish. Dumped it after two sips.
