HOUTGERIJPT WILD BLOND BIER MET SAAZ. Sommige bieren zijn een wilde ontdekkingsreis in een glas, andere zetten juist de tijd stil om je te laten genieten van een moment voor jezelf. Rust is een bier zonder overdaad of uitbundigheid, maar gegrond als een aambeeld, met een intrigerende, kalme balans, alsof de lange maanden in het vat zijn doorgesijpeld in het hart van het bier. Stel je een wandeling voor in een oud bos, waar dikke takken kraken en wijsheid zich op de wind wentelt.
Het eerste dat opvalt aan Rust is het houtkarakter. Niet te zwaar, maar verweven door het bier als een fijne rode draad. Sappige aroma’s van zoete mandarijn met een frisse hint van watermunt creëren een kalme, wijnachtige balans, met smaken die dicht bij elkaar zitten. Daaronder proef je warme, moutige toetsen die de rijke fundering van het bier vormen. In de afdronk zit een zachte echo van de Saaz dryhop, die samen met de hout-tannines voor een aards, licht bitter accent zorgt. Rust heeft 12 maanden op eikenhouten vaten gelegen.

Rust heeft de bronzen medaille gewonnen bij de Dutch Beer Challenge 2019 in de categorie “Innovatie/speciaal – houtgelagerd”.

Tap @Fermentoren, Copenhagen. Poured deep orange in color. Real funky overall, soury berryish flavors. Tart and acidic.

Gul tåkete med hvitt skum. Lukter trevirke, sur stenfrukt og noe svovel. Middel sfylde. Sur. Frukteddik, rognebær og noe trevirke. Middels lang.

Sampled @ Billie's Craft Beer Fest 2021. A slightly hazy yellow golden beer with a white lacing. Aroma of tart yellow fruits, grapes. Taste of tart grapes, peach, pale malt, brett.

Batch 5, 6% alc. Clear golden colour with thin head. Aroma is sharp and funky. Lots of wood notes too. Flavour has a pleasant acidity. The tanginess is offset by gentle blueberry notes. Soft, perfumed floral fruitiness.

APPEARANCE: straw, golden color with mild chill haze (with sediment hazy, peach juice like appearance), snow white crackling head that quickly dissipate in small ring that stays on the side of the glass; slowly rising carbonation

AROMA: very inviting on the nose, there are clear wild and funky components similar to traditional lambic and oude geueze beers; sweet and green apples, juicy notes, stone fruits - notes of peach and apricot, hints of perfume and lemon balm, dry white wine and soft wine tartness, wet barrel, soft funk, dust, hints of cheese rind and whey; light to moderate sweetness, low to light bready malt backbone, gentle sweet herbs underneath (impression of diluted herbal candy) and minerals

TASTE: moderate carbonation, not typically lively for saison, medium light body, very smooth mouthfeel with moderate dryness; light sweet onset from malts but not typically bready or yeasty, hints of honey, very mild candy and stone fruits; smooth and soft white wine like and lemon tartness provide refreshing feel, surprisingly bitter for almost three years old beer, herbal notes paired with light tannic bite, minerals; barrel presence is very soft, no harshness; with sediment more stone fruit sweetness - peaches on the palate, subtle lactic note in the background

OVERALL: very enjoyable beer, harmonious & highly drinkable with smooth notes of barrels, minerals, esters, funk and light drying bitterness; now I’m curious to try other batches

Bottle at tasting. Golden pour. Aroma of horseblanket, funky barnyard, citrus and orange. Taste has nice bretty funk, grain, orange, citrus, horseblanket and a long bretty finish. Another great nevel.

Dark golden with off white head - Sour wood barrel aroma - Malt body with a sour wood flavour - The sour wood flavour goes into a long dry finish - This was nice

Bottle shared at Maakun’s. Hazy pale orangey with thin white head. Tangy grapefruity fruitiness, woody, mossy treebark, soft and doughy, yeasty. Light sweet, light bitter, mild sour. Medium body and soft carbonation.

Bottle thanks to sjogro. Quite hazy orange golden with white head. Quite some yeast with Brett, sweet malts and grains, oak. Medium sweet and light sour. Medium bodied with quite thick feel, bit ropey even.
