HOUTGERIJPT WILD BLOND BIER MET SAAZ. Sommige bieren zijn een wilde ontdekkingsreis in een glas, andere zetten juist de tijd stil om je te laten genieten van een moment voor jezelf. Rust is een bier zonder overdaad of uitbundigheid, maar gegrond als een aambeeld, met een intrigerende, kalme balans, alsof de lange maanden in het vat zijn doorgesijpeld in het hart van het bier. Stel je een wandeling voor in een oud bos, waar dikke takken kraken en wijsheid zich op de wind wentelt.
Het eerste dat opvalt aan Rust is het houtkarakter. Niet te zwaar, maar verweven door het bier als een fijne rode draad. Sappige aroma’s van zoete mandarijn met een frisse hint van watermunt creëren een kalme, wijnachtige balans, met smaken die dicht bij elkaar zitten. Daaronder proef je warme, moutige toetsen die de rijke fundering van het bier vormen. In de afdronk zit een zachte echo van de Saaz dryhop, die samen met de hout-tannines voor een aards, licht bitter accent zorgt. Rust heeft 12 maanden op eikenhouten vaten gelegen.

Rust heeft de bronzen medaille gewonnen bij de Dutch Beer Challenge 2019 in de categorie “Innovatie/speciaal – houtgelagerd”.

0.375 l bottle from 'Etre Gourmet', batch #5, bottled in April 2021. Very hazy, orangeish golden with a thin, frothy, slowly diminishing, white head. Slightly sweetish, quite sourish, gently fruity and a bit funky aroma of hay, lemon, rhubarb, some white grapes and a touch of oak. Slightly sweet, gently sour, rather fruity and slightly funky taste of lemon, rhubarb, oak, white grapes, gooseberry and some hay, followed by a short, slightly bitter, gently tart, moderately woody-dry finish. Medium body, gently astringent and moderately effervescent mouthfeel, soft carbonation. Nice brew, sad to see them disappear forever, one of the few Dutch sour and wild beer experts.

On tap at Bierproeflokaal in De Wildeman. Pours hazy blonde with a white head. Musty and buggy nose. Flavour has pale malts, rustic yeast, some leather; musty and buggy. Great wild ale.

Bottle from Drankenhandel Leiden. Aroma is funky and tart fruity with wood, peach, citrus, grass, apricot, oats, white grapes, hay. Flavour is tart and mild sour with a dry finish. Body is medium. Beautiful brewing from Nevel, complex, fruity and refreshing. Tart and sourish, funky, the way I like my Saison.

Poured from bottle @ MBCC 2023 red session (finally adding my notes). Hazed gold with small white head. Funky nosse, doesn't fill out on the taste as much.

Bottle. Pours a bit thick, almost clear golden. Lovely oak and malts, a bit ropey. Very nice.

Bottle from Batch 6, 5.1% 2002, drunk to celebrate our painters having finished today. What a milestone! Golden blonde, almost no head. Very clear and Brett-funky sour nose, mild basement hints that are intriguing. Moderate acidity for a wild sour, delightful fruity complexity with woody tannins that linger on the back of the palate with the acidity. Super low carb. One serious wild beer!

Bottle pour, taster @MBCC 2023, Copenhagen (Denmark). 06/05/2023. [#6.421 Global - #304 Netherlands - #8 Nevel Artisan Ales] Pours pale orange with a small white head. Aroma: leather, funk and ripe stone fruits. Taste: funk, berries and peach. Funky. Next one please!

Bottle pour at MBCC 2023, pours a clear pale golden with a small white head. Aroma brings out gentle barnyard funk, rustic saison yeast and a touch of stone fruits. Flavour is gently funky, with stone fruit pith, barnyard funk, and rustic notes. Pithy, dry and funky. Good.

During MBCC 2023 Saturday morning session with Matt, Brian, Ryan, Phill, Erik, along with superhelpful, funny, and sarcastic Rachel, hehe. Appearance: hazy golden. Aroma: some phenols, farmhouse. Taste: same, smooth. Overall: quite good.

Pours a light hazy orange colour and afrothy off white head with little retention. Aroma's: horsesweat, brett-funk, sour, woody. Retronasal: brett-funky, sourish, woody. Flavour is moderate sour and light bitter, with a touch of sweet. Light bodied. Moderate bitter finish.
