Het eerste dat opvalt aan Rust is het houtkarakter. Niet te zwaar, maar verweven door het bier als een fijne rode draad. Sappige aroma’s van zoete mandarijn met een frisse hint van watermunt creëren een kalme, wijnachtige balans, met smaken die dicht bij elkaar zitten. Daaronder proef je warme, moutige toetsen die de rijke fundering van het bier vormen. In de afdronk zit een zachte echo van de Saaz dryhop, die samen met de hout-tannines voor een aards, licht bitter accent zorgt. Rust heeft 12 maanden op eikenhouten vaten gelegen.
Rust heeft de bronzen medaille gewonnen bij de Dutch Beer Challenge 2019 in de categorie “Innovatie/speciaal – houtgelagerd”.

Sample at tasting session Nevel @de Bierkoning (8/2/20) thanks Mathias. Hazy pale golden, small frothy off-white head. Aroma brett, lemon, gooseberry, light mint. Smooth taste, medium sour and light bitter, touch of sweetness, tart, apricot, lemon peel, wood, earthy notes. Medium body, watery texture, soft carbonation, smooth and elegant wild ale, good.

Wood-aged ‘wild ale’ by this popular wild ale specialist, hopped with Saaz and seemingly spiced with mandarin and water mint; weirdly with blue coloured logo rather than the yellow one shown here. From a 37,5 cl bottle shared with Craftmember and generously donated by Erwin P., thanks! Medium thick, off-white, opening head lacing in dots over a misty, warm apricot blonde beer with straw-golden edges. Aroma of dried lemon rind or indeed mandarin peel, sourdough, kefir, dry sherry, green pear, gooseberry, dry hay, damp earth and a floral, sweet aroma piercing through subtly but unmistakably – I guess representing the water mint, but a bit camomile-like as well. Sour onset, bit lemony but nowhere too sharply acidic, lively lactic tartness, medium carb, supple bready and cereally malt base with grainy edges (buckwheat and ‘dimly’ spicy rye), aromatized by lemon peel-, lemonbalm- and camomile-like herbal aspects, which I again assume come mostly from the dried water mint they used; even a light herb astringency is noticeable in the end, alongside even more noticeable citrus peel effects from the mandarin. Light bready and earthy yeasty aspects too, adding to the ‘studied’ rustic nature of the beer. Quite stylish, smooth and refined for a wild ale, deliciously so indeed. Nevel house style all the way through.

Bottle. Blonde. Soft fruity and vegetable notes in the aroma. A modest sourness with salt, Peach, citrus and a hint of vanilla, the complexity is there. maybe a hint of licorice in the finish. Good.

Keg at Farm, Stockholm. Hazy golden, small head, low carbonation . Funky peppermint aroma. Mildly tart with medium body and rounded mouthfeel. Lemon, peppermint and barnyard. Low bitterness. Complex, or possibly complicated, unusual and really tasty.

Bottle at home. Hazy amber with no head. Sweet malts, grains, wheat, oats, hay, dried apricot, lemon, citrus, coriander, cloves, wood, rusty iron, bretty funk. Moderate sweet, mild sour and quite dry and moderate bitter. Medium body and soft carbonation. These Nevel beers are so damn well drinkable. Enjoying this very much. Lovely complexity, lovely balance of sweet, sour and bitter, lovely light drinkable character and lovely controlled funky surprise aroma’s. Truly what I want to drink.

Bottle at Luppolo Station in Rome. Misty golden pour, practically no foam. Nose: spicy and citric (and hoppy) aroma, quite fruity, lime. Mouth: tart start which goes watery right away, really thin after the first sip (which blasts). Short end

Little coudy pale yellow beer, creamy irregular off-white head, stable, bit adheisve. aroma: lovely brett notes, very fruity, peaches, apricot. MF: ok carbon, medium body. Taste: very fruity, soft bitterness, little acidic, lots and lots of peaches, apricots, bit lemony, brett, floral notes. Aftertaste: lemony, fruity, bit soapy, floral, soft acidity. Nice one!

Little cloudy yellowish beer, small aery irregular off-white head, unstable, non adhesive. Aroma: very funky, lots of brett, fruity, bit floral, very complex. MF: ok carbon, medium body. Taste: bit watery, floral touch, bitter, lemon peel, some stone fruit. Aftertaste: soft acidity, bitter touch, lime peel, funky, nice stuff!
