Originally brewed on 11/19/2020, this beer blends a number of unique barrel-aged projects including a Belgian-style blond fermented with lager yeast and a portion of Margot, our award-winning blueberry sour. Back-sweetened with blackberry concentrate, Bramble drinks like a full-bodied red wine with light carbonation. The additional sugars precludes bottling without pasteurization, so it will be a taproom-only option. Uniquely tart with a subtle funk, Bramble exhibits the complexity derived from mixed culture fermentation.

CX draught, 12/6/24. Clear dark blackberry-violet. Small, deep-pink head quickly to edge. Tart fruity acids but it doesn't smell sugary. Shame they used concentrate, but it doesn't smell cheap or fake. Bit of malt behind it and maybe a touch of lactic character. Sweet and malty up front with the juicy concentrate balancing the moderate lactic, light oak and very minor acetic elements. Have to admit, I was skeptical but the concentrate works well here for balance where whole fruit may have just caused the beer to be too dry and acidic.
