Blended from a variety of barrels filled over the winter of 2020/2021, Serenata was refermented on a combination of three cherry varieties, chopped rhubarb, and organic Madagascar vanilla beans. All of the blending components were 100% spontaneously fermented and inoculated by native microflora during an overnight rest in our coolship.

Thanks ClarkVV on the 750 ml share! Aroma of funky barnyard and rhubarb. Flavor has low acid and mild bitter rhubarb. Cherry shows in a good character that gives a nice counterbalance. Well crafted!

750mL bottled 5/18/23, drunk 10/19/24. Bright cherry, clear, small, pink-tinged head, quickly to spotty cover. Cherry skin, rhubarb acidity and mild vanilla, with moderate lactic acidity and low Brett. No acetic. Light oak, low tannin. Very aromatic. Moderately funky. Juice cherry vanilla with a bit of vegetal, fruity rhubarb. Malty, good attenuation. Mild, fruity Brett, low lactic. Well this is just a delight! Soft, mellow, fruity, juicy, dainty. That vanilla goes a long way towards softening things, even though the beer isn't acidic to begin with. Juice, authentic fruit, funk.

Thanks Clark aroma is jammy berry, barnyard. Taste is quite good, low acidity, berry, cherry, rhubarb, vanilla. Wow.
