Undated (purchased Summer 2024) 375mL bottle drunk 10/18/24. Clear, lime-tinted, pale, white gold. Light ring of bubbles. Nose is rich gentian-yarrow-like notes. Who knows how many or what herbs are in these bitters, but it's bitter, aromatic ones and it's brightly aromatic and fantastic alongside a more rich, sweeter cider. In the mouth the bright, bitter herbs shine and are tempered by a bit more residual sugar (still far from sweet) and an excellent body. Juicy apple and mild Brett appear on the finish alongside more easier-going herbal notes. Reminds of something Wunderkammer is doing, which is high praise in my book.
