This beer started as a traditional Pilsner wort, brewed with Barked Pilsner and hopped with Saaz and Hallertau Mittelfrüh, which was then co-fermented cold with Lager and Saison yeast. It was then barrel-aged with brett and bacteria, before an addition of wild forest honey gathered just down the end of the road
The result is a dry, tart and funky beer with lots of forest and honey aromatics.

Bottle. Gusher. Color: Hazy pale golden, fast disappearing white head. Aroma: Malty, funky. Taste: Mix of crisp Pilsner, spicy Saison, rural and wet dog funk, fruity citrus hints, light tartness and light to moderate sweetness. Very light bitterness. Dry finish. Medium body, below average carbonation. Another unusual blend from Le Soupir. Again a very nice one.
