Tap at the Cellar. Really delicious flavors, sort of like a pastry sour done right. Lime vanilla coconut is a great combination, the lime is tangy and intense, not that plastic tasting extract flavor crap. Really good stuff.

375mL bottle, blend #1, drunk 4/18/25.
Cloudy, despite a long rest in the fridge. Canteloupe-orange with a rapidly-fizzling, off-white head.
Nose is herbal lime character, very interesting and unique, with somehow, very little of the vanilla or coconut, to the point I didn't realize those were in here, not having re-read what this beer was before I took a sip. In retrospect, the vanilla is certainly there, though not overdone, but the coconut is almost absent from the nose. Clean, tart, fruity, malty and well-put-together, it seems.
Oak, juicy, fruity, not acidic lime with soft, rich vanilla and gentle coconut. Really love the innovation here. It's so far away from most breweries shitty pastry sours with gobs of sugar and overdone adjuncts that smash you in the face so that the average beer drinker can 150% taste them. Not so here. Adjuncts done in good proportion, with lime certainly prominent, but not overdone. Rich malt with structured oak tannin, though low oak flavor. Chewy texture with high attenuation and moderate, playful Brett. Should be good and incredibly interesting/evolving for years to come. Next bottle I get I will hold on to for a couple of years.

12.7 oz green bottle from the Untappd Wild Year in Beer box. Aroma has notes of Brett, wood, fresh cut grass, citrus peel, vanilla, floral. Taste is highly sour (8/10) with flavors of the aroma descriptors and faint notes of coconut and vanilla.

Bottle from Half Time, 12/26/24. Pours unclear yellowish-orange with a big, fizzy head. Tart and funky, with a ton of lime, almost a salinity as well. Vanilla and wood notes underneath, both fairly sublte. Kinda giving off lime gose meets brett pale ale vibes. This is a fun and interesting beer that is better than it sounds when I describe it. 8/4/8/4/17

Gnarly amounts of lime, coconut, and vanilla notes while staying mostly soft and funky with a slightly tart finish. Real fun floral and citrusy thing.

On tap at Side Project Cellar. Beautiful hazy orange body with white head. Some funk, brett, citrus, lime, grapefruit. Pleasant medium sourness.
