Guillemot; Frederiksdal Puncheon is another special treatment of our Dense & Dark Saison, this one being brewed in January of 2018 as well, and aged for over a year in puncheons previously filled with the famous Frederiksdal Cherry Wine from Denmark. Bottle conditioned for an additional year and released today, for you and yours. Notes of fresh cherry pie, rooibos tea, barnyard funk, bittersweet cacao, and cooked lemon.

Bottle from Fermenteria or Dudley Direct: pours near black with very carbonated beige head. Aroma is sour cherry, spice, toasty malts. Taste is rather sour, has a slight toasty note, loads of cherry wine. Woody notes. More acidic than I would have liked.

Bottle. Pours clears hickory, small beige head, decent lacing. Aroma is roast, oak tannin, hints of wine, bugs. Flavor is light tart, light plus funk, lots of barrel influence, not necessarily cherry. Medium body. Good enough,.
