The Malt Base consists of Pale Malt with generous additions of Chocolate, Carafa Special, Three Crystal, Oats and Biscuit Malt to give a rich, dark base. Hopped exclusively with Bramling Cross during the boil and post-boil hop stand to set the fruity notes for the quince to spring from. We also lightly spiced during the boil with cinnamon, nutmeg and root ginger to enhance the aroma with an Autumnal hit. Brewed in collaboration with Full Circle Brew Co.

Cask at the Southampton Arms, London on 8th February 2020. Impenetrably black with tan foam and full lacing. Coffee roast malt aroma. Spicy malts in-mouth and a vigorous roasty malt finish. Zingy mouthfeel and a medium body.

17/01/2020. Keg at the 11th Elysian Winter Beer Festival fringe festival at 3at3. Pours almost black with a small bubbly beige head. Aroma is earthy, smoky, cinnamon, light quince, citrus, chocolate and spice. Moderate sweetness, light to moderate bitterness, touch of tart. Medium body, oily texture, soft carbonation. The quince is really subtle, and is very nice combined with the chocolate and light spiced edge. Very well done.
