One of the first aged sours to leave oak at Bellwoods, Donkey Venom is a complex beer that we release a couple times each year. At its roots it's a rich, dark ale, but the time it spends in barrels with brett and bacteria harmonizes the ingredients, yielding bright levels of acidity and complimentary fruit flavours. A hybrid style of sorts, that defies simple categorization.

The welcome addition of Montmorency cherries from Schuyler Farms in Simcoe, Ontario bring a jammy berry aroma while suggesting some warming spices. Decent acidity and brett funk manifest through winey, earthy prune flavours. The base Donkey Venom flavours of brown sugar and black forest cake take a back seat but compliment how wonderful cherries grown in Ontario can be.

Dark brown bordering on black pourz with a beige head. Aroma is Flemish red, balsamic vinegar, dark tart cherries and boozy fruity cake. Full mouth feel, soft carb. Medium bitter, medium tart, light funk, lots of vinegar cherries.

Pours an inky blaxk with a sheet of tan head that reduces to a ring. Nose is vinous sour, coffee and cherries. Initial taste comes in strongly aserbic sour, but mellow with time. Vinous grapes, vanilla oak, overtop toasted malts, with mild cherry in the follow-up. Finish is cherry and sour.

Bottle: Poured a dark color ale with a large brown foamy head with good retention and some light lacing. Aroma of tart notes with light roasted notes and some dark cherry pit notes. Taste is also a mix of tart notes with some roasted malt notes and dark cherry pit notes. Body is about average with good carbonation. Interesting sour though cherry notes do tend to become a bit acidic.
