It’s time for the third wave - a beer that awakens the senses from first sniff to first sip. This sour, blended ale folds our sour, oak-aged Belgian style quadrupel with blackberries into our malt-forward, bourbon barrel-aged old ale, and finishes with a Flemish good morning kiss, for an awakening, robust and sweet & sour twist. It’s complimented and balanced by the gentle, roasty character imparted from freshly roasted coffee from our friend’s at Portola Coffee Lab - a blend that was specifically selected for this complex, sour coffee ale, and a concept that was nearly a year in the making.

Bottled 9/22/16, drunk 5/20/17.
Mahogany with deep crimson hues when held to the light. Good clarity and a small, beige head showing low retention.
Coffee and bourbon seem the most prominent here with a surprisingly fruity, earthy, mild roast character from the coffee for an eight month-old beer. Lots of bourbon, though it’s a good deal of the actual spirit and less so any huge toast character (vanilla, coconut, etc..). Oak is certainly still there, however and the beer gets even more rich as it warms and breathes. Interestingly enough the blackberries are almost non-existent, which is probably a good thing as this beer certainly doesn’t need any more intense characteristics, especially, dry, spicy, acidic ones. Also lacking is any heat or sharp booziness and to that end, it’s quite enjoyable, as despite the coffee and bourbon being very dominant/rich, they’re both quite enjoyably-done here.
Fairly acidic in the mouth with light acetic, strong lactic and very light black berry-like acidity drying out both coffee and bourbon characteristics, as well as the malt, which shows medium-attenuation. That’s quite appropriate here, as it has a lot to balance in the form of bacterial and fruit acidity, oak tannin and toast and coffee roast bitterness. It does it fairly well, though a low, somewhat loose carbonation concentrates things a bit too heavily. Bourbon/oak linger on the finish with dark fruit acidity and light caramel-vanilla malt notes. For 12.3%, this is very well-done, but I wonder that it has to be 12.3% to achieve what’s going on here. Could be quite nice in another two years, though that depends a lot on how the acidity evolves.
