Being and Time is our first spontaneously fermented beer. In January 2011 we brewed this simple wheat-based wort and slowly cooled it, overnight, open to the ambient Greensboro air. Fermentation in oak barrels slowly followed, with the presence of nothing more than what our environment dictated. After more than 28 months of evolution, in the self-same barrels, and years of bottle conditioning, we are proud to offer an exceptionally unique expression of our landscape.

Backlog - not sure why I've never gotten to type this in. Found this rating on one of my first notes on my phones cloud hah! Bottle @ Koelschip. Pours light hazy yellow with a small white head. Aroma has yeasty estery fruity notes, heavy oak, stone fruits, vinous grapey notes, citrus. Taste has lots of vinous notes, green grapes, stone fruits, oak, lactic acidity, estery fruity notes. Dang delicious

2000th Sour Rating. Bottle at Koelschip. Pours a hazy orange gold with small white head that diminishes to nothing. The aroma/flavor is oak, lemon, apple skin, wheat, yeast. Thin body, very tart upfront with a lingering dryness, really enjoyed this one.

Bottle @ Mikkeller & Friends. Hazy pale golden pour with a frothy white head. Lemony stone fruit nose with light funk. Heavy sour fruity taste. Dry, tart & mouth-puckering mouthfeel. Very sour but also very tasty!

Bottle 375ml. @ Koelschip, Stefansgade No.35 kld., Copenhagen, Denmark 2200. [ As Hill Farmstead Being & Time ].ABV: 6.0%. Unclear medium orange colour with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, pale malt, sweet malt, fruity malt, moderate hoppy, fruity hops, moderate yeasty, fruity yeast, oak, lemon, funk, stone fruit. Flavor is moderate to light light heavy sweet and light acidic with a long duration, oak, fruity malt, fruity yeast, wood, stone fruit, lemon. Body is medium, texture is oily to watery, carbonation is soft. [20170511] 8-3-9-4-17

Draught at Hill Farmstead, 5/27/17.
Bright orange-auburn with lighter gold hues, a good clarity and a small, off-white head atop that slowly fades to cover.
Soft mix of bacteria/yeast-driven acids in the nose display a range from cherry, strawberry and apple esters, to moderate funk (horseblanket, various farm scents). Wheat in the background provide light hay/grainy bread and vanilla character which works incredibly well with the lambic-esque character of the nose, in general. No alcohol or flaw. Lots of pepper-like phenols lingering pleasantly with very low barrel influence (obviously not intended to highlight the barrel here).
Soft and lightly juicy in the mouth as fruity esters and plentiful Brett and acetic acids create a rustic tartness that mixes nicely with the wheat, forming a very soft, supple texture that is graced by the presence of the low but engaging carbonation. Light lactic dryness and a bit of sharp acetic acid linger on the finish which is replete with apple, cherry, strawberry and vanilla. Clean and very nicely done, unsurprisingly.

[5/11/17] Bottle at Koelschip in Copenhagen. Hazy golden. Oak, funk, fruitiness, bread, honey hint, vinaigrette, earth, flowers, tart, acidic, medium-bodied. Very good.

From bottle at Mikkeller and Friends / Koelschip, Copenhagen. Light hazy orange color with no head. Yeasty and light malty aroma, funky, barnyard, leather, stone fruits, veggie - spicy. Sweet, light bitter and acidic taste like aroma. Medium oily body with soft carbonation.

Flavor is very sour, little yeast, wood, tart oak, rich tart fruit, peach, apricot, white wine, grapes. Medium body, average carbonation, dry and acidic finish. 110517
