A Tart Saison Aged in Oak Barrels With Chardonnay Pomace

Two summers ago, we brewed a tart saison that fermented so quickly, the sourness did not have a chance to develop. So we let it rest. A year later, our friends at KIN Vineyards had finished their Chardonnay pressing, and offered us the remaining grape pomace to encourage the souring of this beer. We let it rest again. Winter passed. Spring passed. Let’s enjoy it now!

Bouteille de 750 ml. De traditionnelles notes fermières en olfactif avec notes de petits fruits, de citron, de groseilles. Un liquide doré orangé, très flou, avec une mousse effervescente qui dure à peine quelques secondes. L'entrée de bouche en acidité tranchante nous dévoile une panoplie de lactobacilles aux tons de citron, de petits fruits, de vinaigre et un certain coté salé qui rappelle étrangement les Goses. On peut y percevoir également un petit boisé de barrique qui vient donner un élément de complexité additionnel. L,indice de buvabilité est extrême. Le potentiel rafraîchissant absolu.

(On tap @ Birreria Volo, Toronto, Jan 19/19) Nearly clear dark gold pour. Notes of sweet-tart white wine, some malt, lots of buttery slightly toasty oak, lactic bite, vague fruit character. Medium bodied with relatively low carbonation. Not bad at all, tough to pick out the nature of some of the fruity notes and there's not so much funk, while I think the oak was a bit much for me, but it's still pretty drinkable.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with loads of citrusy pulp, light tropical fruits, light resinous hop, very nice. In mouth, a nice sweet fruity malt with light buttery notes, light tartness, grapeskin, light acidity, very nice. On tap at brewery.
