«Papillon de Nuit» est une série de bières mettant de l’avant la complexité et les nuances des malts de spécialité ainsi que les arômes uniques des houblons de la vallée de Yakima. La première bière de cette série, Papillon de Nuit – 1 AM, est une American Strong Ale titrant 8,2% d’alcool, où les notes légèrement torréfiées et de fruits séchés provenant des malts utilisés se mêlent harmonieusement à la synergie aromatique des houblons Cascade, Citra et Mosaic.

Crowler: Poured a bright amber color ale with a large off-white foamy head with good retention and some lacing. Aroma of caramelized malt with light resinous hops presence is quite enticing. Taste is also a good mix of caramelized malt with well-balanced residual sugar level with some resinous hops with light toffee flavours also apparent. Body si about average with good carbonation with no alcohol apparent. Nice level of complexity while retaining some good drinkability.

A reddish copper ale with a thin mocha head. In aroma, sweet fruity caramel malt with light candy sugar, light treacle, resinous hops, light mineral notes, alcohol warmth, very nice. In mouth, a sweet fruity caramel malt with resinous herbaceous hops, light treacle, light mineral notes, alcohol warmth, pleasant. On tap at L’autre Oeil.
