Deep copper in colour with an off-white head, this mixed ferm beer is built on a foundation of Maris Otter and Aromatic malts. The sweet, caramel-biscuit base continues to define this beer but is now partnered with powerful pine-citrus and funky, fruity brett flavours following a year-long maturation with spruce tips and our house culture of wild yeast strains.
Sour cola with lime; subtle earthy and herbal notes; soft and smooth with tingly bitterness and a long, clean finish; this is as complex and unexpected as you’d expect.

Bottle from Appellation Wines. Pours clear dark red-brown with a thin beige head. Aromas of Brett funk, sherbet, spruce. Taste is toffee up front, dry funk, sherbet again and faint spruce. Dry finish.

Bottle online from Cork & Cask, Edinburgh. Pours opaque chestnut brown with a beige cap. Aroma: malt, caramel, spruce, pine. Taste: moderate sweet & bitter, caramel, spruce, yeast, light bretty hints. Light to medium body with light carbonation.

Bottle from Appellation Wines. Appearance - deep brown with orange chinks. Creamy, beige head. So looks like an 80 shilling. Nose - sweet funk and sweet spruce. Wood and lanolin. Taste - sweet spruce, wood, orange and light toffee. Then dried out. Palate - light bodied, then some short lived sweetness with a dry and funky middle and finish. Overall - interesting beer.
