Barrel-aged saison co-fermented with fresh pear juice.

We utilized ingredients from two producers that truly inspire us for this unique offering. We started with raw, California-grown grains from @centralmilling in Sonoma County, and then co-fermented the beer with fresh pressed pear juice from our friends @mission__trail in San Luis Obispo County.

The result has one foot in beer and one foot in perry with a spritzy carbonation and juicy flavor. This one benefits from the ol’ Sante Swirl™️ to really rouse the juice and yeast.

Bottle. Pours clear golden, small white head, decent lacing. Aroma is bugs and pear, lemon yogurt, peaches. Flavor is light plus tart, light plus funk. Light body, soft mouthfeel. Good.

Poured from a 750 ml bottle. Aroma is fruity with moderately strong notes of pear as well as some green grape, lemon and under ripe apricot notes. Faint oak and grain notes. Hints of alcohol. Pours a somewhat hazy, pale, yellow straw color with a small, thin, white head that recedes quickly to the edges and disappears. No lacing and faint legs. Flavor is somewhat sweet with a medium light acidity and light grain notes. Medium low bitterness and light alcohol notes. Faint notes of oak. Moderately strong pear notes with light green grape, under ripe stone fruit and medium light lemon notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent season. Lots of typical SARA funk, although a bit more lemony and acidic. Tons of pear notes. I think my preferences would be for a drier, less acidic, more barnyard note to balance out the bright pear notes. A good cross between a beer and a perry nonetheless.
