Cloud Canopy is a 16% stout blend conditioned on my signature vanilla blend, toasted coconut, and toasted cocoa nibs. Brewed in celebration of Holy Water's 10th anniversary.
I created Cloud Canopy to celebrate the 10th anniversary of one of my favorite San Francisco establishments, Holy Water. If you have ever found yourself staring at the ceiling at Holy Water, you have surely noticed the sepia-toned clouds canvassing the room. Cloud Canopy is the most adjunct-forward stout made by Private Press thus far, and includes double-toasted coconut, toasted cocoa nibs, and our signature vanilla blend. This blend presents luscious flavors of toasted coconut, vanilla gelato, dark chocolate, and flambéed marshmallow. Cheers to another 10 years to a space that is just as impactful and nuanced as this celebratory blend.

Sampled from the tap at Tørst. Pours near black with a light brown head that dissipates quickly to the edges. Aroma has a nice combination of coconut, vanilla and a hint of tobacco with bitter dark grains backing. Flavor has a great coconut and earthy chocolate with bitter dark grains, fig and vanilla supporting.

Bottle. Pours opaque black, minimal head or lacing. Aroma is nice, marshmallows, almonds, fudge, bourbon. Flavor is sweet, pulley, marshmallows, werthers, toffee. Hot. Full body.
