We brewed Keller Instinct to be pilsner-like employing German Pilsner and a touch of German Munich malts, German Hersbrucker and Mittelfrüh hops and fermented it cold with German lager yeast. After several weeks of cold fermentation and conditioning Keller Instinct has a perfect balance of bready malt and floral, lemony hops – all of which are rounded and softened by the lack of filtration.

Poured from a 16 oz can dated January 02, 2024. Aroma is fairly malt forward with lots of biscuit, crackers, and lightly toasted bread. Light grassy, floral hop notes and hints of alcohol. Pours a rather clear, copper-good color with a medium large, thick, frothy, white head that recedes slowly to a small film that lingers on the edges. Light lacing and faint legs. Flavor is somewhat sweet with moderately strong malt notes of toasted bread, crackers, biscuits and hints of honey and caramel. Medium bitterness and light alcohol notes. Light floral, grassy hop notes. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid kellerbier. Nice malt notes in the aroma and the flavor with some balanced hop character. Alcohol is well hidden.

Tap. Pours lightly hazy golden, small white head, nice lacing. Aroma is bready, grass, grain, noble hop. Flavor is light sweet, light plus bitter. Light body.
Revisit 6/25 as a gravity pour. Still nice. Less bready than I remember.
