Standing beer is brewed in the summer and fermented with ale yeast in our coolship at ambient temperatures. The wort is made from barley, spelt, rye and European hops. Maturation takes place in large oak casks with wild yeast and bacteria, until the winter. Finally the beer is dry-hopped with whole-leaf hops and bottle conditioned for several months before release.

Very satisfying and quaffable, but complex. Rounded mouthfeel, funky backbone, yeasty. Soft yet very present. 😋

Bottle at home in Hackney - picked up from HOTM. Pours clear honey-gold with a fizzing, white topping. Light sweet flavour with notes of pale wood, tart citrus, a little spicy cedar, grass, tangerine. Medium bodied with delicate, massaging carbonation. Modest acidity to finish, ample woody dryness, more citric notes, clean grass. Sound.

Cork & cage bottle, online from the source. Good to see a Mills beer in a smaller bottle, finally! Pours hazed orange with minor beige foam. Aroma: wheat, lemon, old hops. Taste: light tartness, lemon, sherbet, light hoppy. Nice complexity. Medium body with light carbonation. Lovely.

Bottle from The Beerhive. Hazy golden body with a white head that slowly fades. Steady carbonation. Patchy lacing. Aroma of lemon, lemongrass and just-rubbed hops. Flavour of salted lemon, nettles and a touch of white wine vinegar. Medium body with a frothy mouthfeel. Light fizz. Sharp and sherbet-like. A hoppy, interesting beer.
