Standing beer is brewed in the summer and fermented with ale yeast in our coolship at ambient temperatures. The wort is made from barley, spelt, rye and European hops. Maturation takes place in large oak casks with wild yeast and bacteria, until the winter. Finally the beer is dry-hopped with whole-leaf hops and bottle conditioned for several months before release.

Bottle, 375 ml, shared with Luka and MiroB. Cloudy golden orange with white head. Funk, some barnyard, citrus, light tartness. Nice easy going saison, nothing too complex or layered, but still a good beer.

Bottle shared bro. It pours slightly hazy golden - orange with a medium fluffy white head. The aroma is fresh, fragrant, funky, barnyard, lemon, lime, grapefruit, sherbet, white wine, hay, herbal, minty accents, verbena and lemon cordial. The taste is crispy, dry, snappy, puckering, lemon, lime, white wine, champagne, grapefruit, musty, funky, dry oak, sherbet, tangfastics and chamomile. Medium body and moderate, fluffy carbonation. Lovely mix of funk, fruit and crispness.

Bottle at the November DC Ratebeer share. Poured a clear golden yellow color with a small white head. Aroma was apple, light tartness. Lemon and light juice, zippy lemon funk.

Lemon mostly. Some lemon balm. Golden pour with decent head. Light tart finish.

375ml pours a clear gold with clear gold with some fizzy white head. Green grape, neutral oak, some lemon, some raw citrus. Flavor is really balanced, neutral wood, champagne, light butter, lemon, funk. Dry finish. Medium bodied.

375ml bottle via the online shop. Didn’t rate the first couple of these as they showed signs of pediococus sickness, so gave this one a chance to right itself. Which it has. Hazed medium gold. Slim ring and a few small islands of sturdy white foam. Nose has a lovely fresh floral hop character up front. Really sings. Under that there’s fresh clean oak. Some wheat. Some lightly acidic grainy notes. Bit of sweet lemon. Bit of jarred preserved lemon. Taste is light tart, juicy hoppy bitter. Slim acetic tang. Lovely mouthfeel is bright and clean but with good depth. Foamy brisk carbonation. Tart juicy hoppy finish. Lovely gear.

Clear orange blond beer, small creamy yellowish head, unstable, falls down quickly. Aroma: very floral, yeasty, fruity, unripe peaches, funky, weird. MF: soft carbon, medium body. Taste: very lemony, pretty bitter, earthy, peach skin, yeasty. Aftertaste: sourish, lemony, lemon skin, pretty bitter, yeasty, floral finish. Interesting and ok, but not great.

Bottle at home in Hackney - picked up from HOTM. Pours clear honey-gold with a fizzing, white topping. Light sweet flavour with notes of pale wood, tart citrus, a little spicy cedar, grass, tangerine. Medium bodied with delicate, massaging carbonation. Modest acidity to finish, ample woody dryness, more citric notes, clean grass. Sound.
