Bottled 12/30/15, drunk 1/25/17.
Light mahogany with amber and beige hues, a good clarity and a large, well-retained, chestnut-tinted beige head.
Light souring cultures in the nose mix with apple and other mild, fruity esters. Some soft caramel and light pepper continue the even, aromatic, clean aroma with little no tea, lavender or lactose to be found in the nose. A hint of lime from the Brett, on the end, with gentle funk as it warms and no alcohol or flaw.
Nicely dry, with remnants of the milk sugar mixing nicely with the lactic acid and bright oak notes, as well as light caramel and evolving fruity esters. Soft, engaging carbonation, no hard/scratchy specialty malts and no alcohol or flaw. As one expects, not overdone on the adjuncts and I really only can pick out the lactose, and only barely at that. The rest provide varied spicy/peppery notes which help balance the malts and the beer finishes with a lightly tart crispness. Another excellent Casita Cerveceria.
