A Blended Oak-Aged Ale
Otto is the result of our desire to utilize a longer matured, higher acidity beer aged in oak casks with peaches; while it already had complexity and a puckering fruit character from more than a year of aging, it wasn’t quite a Fair Isle beer on its own. Taking cues from the tradition of Biere de Coupage, we blended in a portion of fresh, young saison to provide a drier finish and tame the tartness of the older beer.
The aroma is reminiscent of Claude, our annually released oak-aged ale with white peaches – presenting a bright, sharp fruit character. On the palate, Otto is much drier than expected, with a lovely salinity coming through in the finish. As it warms, the character of the young saison in the blend rounds out the edges, while still retaining the depth and stone fruit notes of the older beer. We are quite pleased with how this one turned out, and are excited to share with fans of our fruited catalogue of ales.

Bottle. Pours clear golden, medium off-white head, good lacing. Aroma is funky, barnyard, lemon, stone fruit, Brett notes. Flavor is light plus start, light plus funk, light fruit, tannic notes. Light body. Enjoyable, not amazing.

[notes] Poured from bottle @ FHF 2023 (Aug 12, 2023). Clear yellow with small white head. Feint hops and light funk, not a ton of peaches here, decent.

A taster shared with Josh, Matt, Phill, and Ryan during FHF with priceless Rachel's (yup, again!) help in organizing all the mess with glasses. Appearance: almost clear blonde with a white head. Aroma: harsh herbs, woody. Taste: same, quite smooth, though. Overall: ok.

375mL bottle, pours a hazy golden with a medium white head. Nose is fragrant, with lots of rustic saison yeast, wild yeast, plenty of oak, gentle acidity, and some stone fruit skins. Flavour is moderately acidic, with subdued peaches, rustic saison yeast and oak. Nice yeast character on the finish, with an okay, not-too-acidic peach character. Not their most complex saison but very competent as always.
