Taste: Honey, Biscuit, Pepper
Notes: We used the recipe and process of the Standard, and substituted the Czech base malt in the Standard to Valley Malt from Holyoke MA. As this beer displays, local malt can certainly compete with the classics from Europe.

Side pour, Brighton, 4/2/25.
As pictured.
Clean, fairly floral, excellent mineral and delicate honey. Hops, malt, yeast all lovely and sharing space.
Rich and malty with plenty of honey and biscuit. Dried herbs, flowers, soft malts and a dry finish with ample but not-overdone bitterness. Per usual, an incredible amount of flavor for its size.

Pours clear gold into a willi. Bright white head with good retention recedes go skim surface. Hay and biscuit aromas. Soft with sweet hay and biscuit upfront turning to peppery earth in the dry, medium length finish
