Floral and delicate, Celestial is brewed with buckwheat and Ulmo honey, a highly aromatic and herbal honey from the Chilean forests of Patagonia. Reminiscent of a tart white wine with notes of grape must, lemon blossom, and funk, this beer spent 17 months aging in oak with wild Brettanomyces yeast for added complexity, a touch of acid and mild earthiness. Brewed in collaboration with our friends at Aeronaut Brewing Co. (Somerville, MA).

Cask at gbbf 2022 day 1. Light hazed pale gold brushed dull gold, halo of white head. Aroma is big mouldy wood balsa, sour, grass, pepper. Flavour is composed of semi sweet sour, sick ble, green, pewper, moulvy balsa, terrible. Really bad.

Cask at GBBF '22 day 1, 02/08/22. Very lightly hazed golden blonde with an off white cap formed of bubbles that clears to the edge. Nose is light citric tang, hint of bubblegum, grass, soft malts. Taste comprises tangy fruit rinds, vanilla oak, herb, grains, touch of yeast. Medium bodied, soft carbonation, semi drying close with bitter to sour edge. Not great ... lacks balance and has a buttery edge about it.

GBBF Day 1. Cask. Light haze on this gold beer, small white head.. Smooth palate, very mild carbonation. Good sweet malts into a very floral and slightly honeyish mandarin and tangerine. Light semi dry finish. Nice, quite floral but nice.

Cask@The Great British Beer Festival 2022 (Days 1&2) - Weird, stewed rotten fruit, fruit peel, yeasty and malty, medium to light body, fruity malty finish. Strange. Didn’t enjoy this.
