Tasting at Matt's, bottle
Light colour, almost water. It has some of those estery dry German mead aroma and flavour, wax, but the little carbonation and sweetness make of this a pleasant product.

750mL bottle, pours a clear pale blonde with a quickly-receding white head. Nose is full of champagne-like effervescence, gentle honey, and some wildflower notes. Flavour follows suit, with a really nice champagne funk, wildflower honey, some honeysuckle, and a nice dried out barnyard character. Bright and boozy, with a nice champagne-like crispness. Very good.

750ml at Matt's amenity room. Appearance: almost transparent with a weak head. Aroma: fermented honey, yeasts, some champagne notes. Taste: along the same lines, very carbonated (well, what would one expect? :) ). Overall: interesting.

Very pale and sparkling. Has a bit of a champagne yeast aroma, But on the palate, it's just really sweet, kind of a basic honey note, so I'd like for it to finish dry, but it doesn't. I'd say it's more an interesting experiment than anything else.
