A Farmhouse Dark Mild Conditioned on Cherries
Paulie is our extremely sessionable Farmhouse Dark Mild, featuring the roasty and nutty tones of darker malts and a hit of bright tartness from our house culture. We’ve always picked up notes of Bing cherry in this beer, and wanting to reuse the cherries from another fruited project, it seemed like a perfect match to condition Paulie on the second-use fruit. We think it’s a fantastic way to welcome the holidays and colder days ahead!

Tap. Pours clear chestnut, small beige head, decent lacing. Aroma is a bit smoky, roast, ash, cherries. Flavor is light tart, cherry and roast notes. Medium body. Good

12 oz can. Pours a very dark reddish brown with short foamy tan head. Aromas of dark cherries, oak, a bit of balsamic vinegar, and sharp wheaty malts. Flavors of chocolate malts, oak, and dark cherries with a malt vinegar finish.

12oz can. Pours dark brown with minimal head. Aroma has very mild funk with notes of leather dark cherry, and fresh grass. Flavour is very earthy with a bit of funk, dark cherries, slightly sour; dry cherry pit finish. Subtle, but really nice.

Re-rate: poured from the tap @ Darbys. Dark brown with small off white head. Mild funk with some nice rainier cherry underlay. Feb 18, 2023 (7/3/7/3/15=3.5): Poured from 355mL can @Weathered 2023. Very dark amber brown with small off white head. Mild cherry and roasty saison yeast. A decent dark sour that could use a touch more complexity.

12 oz can poured, picked up at Chuck's. Can totally get on board with these high quality brews hitting my local shelves in Red Bull cans. Dark pour, reddish near black with plenty of dark, off white foam head. Love the dark cherry notes on this. Bold over sweet. Dry finish. Quite tart on the linger. Very pleasant saison here.

Glass shared with Matt and Andrew. Appearance: brown with a tan head. Aroma: nice cherries character accompanied with some dark malts. Taste: along the same lines, a bit dry finish. Overall: good dark sour.

On tap at Fair Isle, pours a deep dark brown with a medium tan head. Aroma brings out dark pitted cherries and gentle farmhouse notes. Flavour reveals a really nice rustic saison yeast character, earthy notes, dark pitted cherries, and leather. Really nicely structured, with leather and dark cherries to finish. Excellent.
