The Ataulfo mango is known for its rich, tart flavours and was the inspiration for this perfectly barrel aged sour. Matured in French oak for over 4 years, mango fruit is added in the last stages and aged for an additional 6 months. The mango adds to the tartness during the souring process, while also leaving a slight residual sweetness. Enjoy this unfiltered live beer. Decant into a glass leaving the less behind.

Orange-amber, with haze, but no head. On the nose, there's some mango, some barrel. On the palate, it's more expressive. It has a deep lactic component, green mango, light tannins, some residual sugars, maybe vanillins in there, and a touch of alcohol late. Mango not being sweet isn't ideal, mind you, so I'm wondering if it was underripe mango or just all the sugars fermented out. Would have liked a last minute does of sweetness - it's not that the beer is out of balance but my expectations were for something sweeter.

750mL bottle, pours a cloudy dark orangey amber with a small white head. Aroma brings out gentle wild yeast, restrained tart mango, and plenty of oak. Flavour is quite complex, with wild yeast, gentle tart mango, lots of oak, and a bit of vinous character. Really nice cohesion here between the oak and bugs. Excellent.
