An imperial stout aged in an Austin Nichol's bourbon barrel, conditioned on a bunch of toasted hazelnuts and organic fair-trade cacao nibs from the Philippines.

This is the next beer in the Temporal Void Series, an exploration of the extremely strong end of barrel-aged beers.

I wanted do something a bit excessive for the next iteration of the Void Series "Horizon" stouts. I'd been planning for a while to do a "hazelnut chocolate spread"™ beer and, after tasting through some barrels, picked a single Austin Nichol's bourbon barrel of stout (brewed last June) for the base!

I crushed up a very large amount of toasted hazelnuts and added them directly to the brite tank with the beer. I also added a bunch of cacao nibs sourced from the Philippines. I have a really great cacao supplier that gets fair-trade organic nibs (the good stuff) from all over the world. It's really important to me that I work with suppliers that have strong values and ensure their partner farms and co-ops are paying workers a fair wage. I chose the Filipino nibs for this beer because they had a very deep, fudge-y, classic chocolate note that I thought was very reminiscent of "hazelnut chocolate spread"™.

It's crazy how different the single-origin nibs can smell and taste. One of the bags I ordered is from the Dominican Republic, it's super citrus-y and bursting with cherry & red fruit notes. Obviously not an ideal choice for this kind of beer but I'm excited to put them into something. But I digress.

This beer is awesome. It tastes like "hazelnut chocolate spread"™. If you like hazelnuts and chocolate, this one's for you.

330 ml bottle. Pours black with little head. Aromas of chocolate syrup, vanilla, soft bourbon, and slick roasted malts. Flavors follow same with addition nuttiness and a bit of spice. Soft warm and dry finish. Very good.

Bottle
Black colour, small head. It's lean and not very sweet, like all other Void beers, the accent is on chocolate, there is a trace of roasted nuts, but I wouldn't guess hazelnuts; it's fairly hot. Very good.

330ml on Alex's porch. Appearance: verydark brown with a beige head. Aroma: noticeable bourbon and bourbon barrel, some light red apples, almost no notes of the meaty malt base that's common for most of the dark beers produced so far. Taste: bourbon, a bit hot, chocolate, vanilla, roasted malt bitterness. Overall: pretty pleasant, but where is an absurd amount of hazelnuts declared, I am not sure...

Medium-dark brown. Just a little head. The aroma is assertive on the bourbon and it's kicking off bubblegum and alcohol. On the palate, more alcohol, but it's absolutely dominating. The base beer lacks the body and residual sugars to cope. Not saying there's no sugar, just not enough for the power of the treatment. The flavour elements likewise struggle to compete. The barrel is just too much for the base, and the flavour elements don't seem to show up much at all. Love the idea but as with last year's Gold Foil, it leans too much into the barrel and not enough into the dessert part of the equation.

330mL bottle, pours black with a tiny tan head. Nose indeed brings out an absurd amount of toasted hazelnuts upfront, followed by dry cocoa nibs, and plenty of bourbon. Flavour is on the dry side for the style, with an intense amount of roasted hazelnuts, followed by dry cocoa nibs, somewhat bourbon barrels, and a hint of burnt dark sugars. Complex and wonderfully integrated, with the nuts wonderfully dominating. My favourite of the recent Temporal (BBA stout) beers.
