Native Refermentation of 2021 Harvest Pinot Noir and Chardonnay Grapes

This 2021 harvest beer was made through an entirely native fermentation of Chardonnay grapes from French Creek Vineyard in the Yakima River Valley and Pinot Noir grapes from Johan Vineyards in the Van Duzer Corridor.

This beer consists of a blend of open and barrel fermented saison. It was refermented to condition in the bottle with raw honey from Cougar Canyon Apiary harvested on Rattlesnake Point 10/01/2021.

Pink-purple colour, not much head. Tart, light berry, stone fruit, decent acidity. Touch of alcohol late.

On tap at Brouwer's Cafe - 18th Anniversary event, pours a hazy dark red with a small beige head. Aroma brings out faded tart cherries, buggy wild yeast, and wild yeast. Flavour is buggy, with lots of red and white grape skins, lots of wild yeast, and light floral notes. Complex, cohesive and wonderfully cohesive. Wonderful.
