Boreas (2022) was aged in an eclectic variety of fresh Kentucky bourbon barrels. This 11% indulgence is a blend of 18-month (Buffalo Trace) and 6-month old (Willet) imperial stouts. Intoxicating aromas of coffee and dark chocolate guide you into the glass, giving way to a sweet, luscious mouthfeel, with just enough bourbon character to round it all out. The days may be getting colder, and the nights are surely getting longer, but you can always turn to Boreas to keep you warm.

Dark brown, thick head. Lots of barrel up front on the nose. On the palate, sweet chocolate and a fairly strong character with lots of barrel. Smooth and sweet…probably I’d prefer more bitterness but that sweet malt character is really nice.

473 ml can. Pours a very dark brown with short tannish head. Rich aromas of nutty chocolate, malty bourbon, vanilla, and slick roasted malts. Flavors of bourbon and oily roasted malts with vanilla, dark fruit and some graham crackers in the background. Bourbon alcohol is a bit heavy in the mouthfeel and finish, but still very nice overall.

473mL can, pours jet black with a small brown head. Nose is full of rich bourbon, vanilla, and a touch of molasses. Flavour is rich and complex, with lots of bourbon barrel presence, vanilla, molasses, and some oiliness. Rich, integrated and smooth, with a wonderfully rich and complex palate. Excellent.

One year and multiple cans later, this is the first can with a tart thing going on, borderline metallic, overpowering the good qualities it used to have; chocolate, berry jam; it could go down if had with food, but not so great alone.

2022-11-25, can from the brewery, 8-4-8-4-17=41
Dark brown colour, not much head. Very nice aroma, chocolate, vanilla. It's round and sweet, with chocolate flavour, traces of vanilla, of whiskey, but also a bit weak in the finish. It's not very complex, it tastes like a cheap pleasure, but it's very good. Better not to age this one.

Apr 03, 2025 (7/4/7/3/15=3.6): Poured from 473mL can. Very dark brown with small beige head. Sweet herbal medicinal candy thing going on here, still has some vanilla, but the bourbon is gone, thinner-medium bodied. Okay, but definitely fallen off 2.5 years later.

Nov 25, 2022 (8/4/8/4/16=4.0): Poured from 473mL can. Very dark brown with small beige head. A nice bourbon barrel note, some roast, mild sweetness. Good flavour-to-cost ratio. Will buy more to have on hand. Rounded up from 3.95 based on the cost. Could have a touch more depth.

16oz @ 🏡 Appearance: brown with a huge beige head. Aroma: charred oak, bourbon, some roasted malt, a little bit of sweetness. Taste: moderately sweet, silky, very barrel forward, a little bit of booze and roasted malts. Moderately thick, like 3.5/5. Overall: good one, especially for the price.
