This mixed culture saison started out with a lovely balance of malt and old world hops with a hint of rye spice before undergoing a secondary fermentation alongside heaps of fresh pitted apricots to add a mild tartness and wonderful flavour. We then can (and keg)-condition the resulting beer with our favourite strains of brettanomyces to add carbonation and a wonderfully complex fermentation profile to the mix.

Poured from the tap. Slightly hazy copper brown with small white head. Earthy rye, mild apricot, not totally coming together, but decent.

Can. Murky and ugly-looking beverage. Thin head. Smells kind of yeasty, too. The ferm isn't doing this one any favours. There's some light lactic stuff, a bit of fruit, but yeah, the ferment isn't really up to Wild Ambition's normal standards. The base has mild tartness, light fruit, a touch of bretty and it's way too yeasty. That just muddies up everything. A rare miss from one of BC's best breweries.

473mL can, pours a hazy copper orange with a small white head. Aroma brings out rustic, earthy saison yeast, and tart, subdued apricots. Flavour reveals earthy, spicy rye, tart apricot, and gentle rustic notes. Cohesive, gentle on the apricots, with an earthy, spicy finish. Well-made but nothing special.
