Native Refermentation of Grapes from Palimpsest Vineyard
Newberg, Oregon
This 2021 harvest beer was made through a native refermentation of Muscat grapes from vines at Palimpsest Vineyard in Newberg, Oregon. The grapes were destemmed and crushed and allowed to referment with skin contact for quite some time with a blend of open and barrel fermented saison and then allowed to further age in tank.
This beer was refermented to condition in the bottle with raw honey from Cougar Canyon Apiary. Harvested in Chiliwist 09/25/21.

Sample from the bottle in front of Mikkeller Friends, Copenhagen. Color is cloudy slightly reddish golden with small white head. Aromas and flavors: Fruits, some tropical fruits, sourness... Pretty fruity!

Hazy pale, no head. There's some nice vinous aromas here, big floral and stone fruit notes. Soft body. That honeyed tulip, lavender... I imagine that's the way the muscat is coming through. That's really unique. There's just a touch of acidity, a few bugs here and there. The base pale malt provides just a bit of support but the way that muscat character comes through is a riot.

750mL bottle, pours a hazy golden with a small white head. Aroma is excessively floral, faint grape skins, and gentle bugs. Flavour reveals a super floral grape must, some rustic notes, a touch of funk, and finishing peppery and floral. What a unique grape expression -- super floral. Excellent.

Poured from 750mL bottle. Clouded yellow with small white head. Oak, florally vinous muscat notes, enjoyable.
