Presenting Nikolai, our collaboration with Otherlands Beer!

Nikolai is a light hoppy saison with a blend of Saaz, Tettnanger, and Hallertauer Mittelfrüh at 3.5 lbs per barrel creating expressive notes of floral, spice, and a lingering soft bitterness. Fermented in open vats, our house culture of feral and wild yeasts and bacteria fuse hops with the intrinsic floral and Meyer lemon profile from our yeast.

Inspired by our favorite extra hoppy Belgian ale, Taras Boulba, we designed this table saison utilizing 100% pilsen malt from LINC and European hops as an homage to the Wallonian saisons that both Fair Isle and Otherlands aspire to.

375mL bottle, blend #2, drunk 8/17/25.
Mostly clear, blonde-brass. Small, dense, white head, good retention.
Oh SHIT! That IS saison. The real deal Belgian stuff. Don't get any "bugs", just pure, authentic Sacch. evocative of Dupont. Haven't had much of Otherlands, so I don't know know their lager yeast character, but I assume the saison strain quite trumps it in terms of aromatics. There's a very gentle, fruity Brett presence, but make no mistake, this is classic Saison yeast through and through. Lemon pepper from the hops feels equally authentic and rustic grains finish off the perfect view of Belgium.
No surprises that the flavor is, then, equally authentic. There's a pinch of lactic or Brett (can't quite tell), with earthy and herbal hops. Brett on the finish and something redolent of Styrian Goldings in there, as well. Body is lighter and more grain-focused than something like Dupont, but probably in the realm of Blaugies, if a bit less full and fluffy in overall texture. Lager yeast, I assume, contributes to this somewhat. One hell of an homage to the Belgian saison, though, and I'm probably buying every Fair Isle saison I can from here on out (was already buying most of them, but this solidifies it).

Quite pale, hazy. Sweet and snappy hop, light brett and a bit of barrel. Clean pale malt. This hits.

375mL bottle, pours a hazy blonde with a small white head. Aroma is full of spicy hops, rustic farmhouse notes, and lots of intense bugs. Flavour is nicely hopped, with lots of rustic farmhouse notes, wild bugs, and bright spicy hopping. Buggy, grainy, and quite hoppy finish. Very nice.
