After de-stemming and foot stomping, these crushed grapes underwent re-fermentation with the base beer mentioned above for 70 days. Before packaging we blended in a small amount of an oak aged saison that rested on Syrah pomace. The resulting beer is a beautiful, light-orange hue.
Named Lorraine after a region just west of Alsace, we are enjoying the lightly spritzy and notes of notes of lychee, pear and floral bouquet that Gewurztraminer adds for the tapering of summer days.

Hazy, medium head, really nice brett, floral hop, balanced, quite good. Some tartness.

On tap at Fair Isle. Pours murky dull blonde with a white head. Tons of musty, juicy grapes dominating the nose. Flavour has a spicy, funky saison yeast profile with lots of must and funky grape skins, gentle acetic acid. Very nice.

On tap at Fair Isle, pours a hazy bright golden with a small white head. Aroma is loaded with crisp grape skins, wild yeast, and lots of oak. Flavour is very tannic, with lots of dry grape skins, wild yeast, oak, and rustic notes. Bone dry, with complex grape skins on the finish. Excellent.
