Made with time honored traditions and Washington malts
While we have brewed both complex oak-aged ales that inspire conversation as well as simpler saisons that are focused on easy drinking, we believe lagers are another nudge in expanding our offerings of easy drinking and everyday beer. We’ve been excited to offer stellar lager options from fellow Washington and Oregon-based breweries in the taproom, but now we’re proud to finally introduce the Fair Isle House Lager.
Brewed with 100% Washington malts from the fantastic @lincmalt, the main focus of our lager program is to place an emphasis on highly expressive, locally grown malts. After conversations and exploring grains with Brian of LINC Malts, we began to develop recipes based on classic lager traditions. Our first release is inspired by German-style Pilsner, using a combination of LINC’s Genie Pils and Baronesse Pils, and German Tettnanger hops sourced from Crosby Hops. For this batch, we used classic lager techniques like spunding (or naturally carbonating in the tank), slow crashing and extended lagering for 6 weeks to allow the yeast to express itself.
Ultimately, we are approaching our production of lager the same as we approach brewing saisons: using time as a crucial component, and employing old world techniques with Washington ingredients.

Incredible amount of aromatics coming off this thing while pouring. Rich, spicy, fresh herbal hop character with a good mix of rustic grain, honey, cracker, etc. from the malt. Clean, crisp, intense. Very impressive for its relatively small stature.
Wow, they really got a lot of bang for the buck. Damn. Excellent, almost chewy malt character is deep and supple, but properly attenuated and showing a bit of sourdough and biscuit character to add more texture. The hops really shine, with wonderfully flavorful, spicy character. Herbs and soft florals for days. Good bitterness, but not overdone. Still maintains a good levity for high drinkability despite all of the rich flavors. The longer it breathes and the more I drink, the more intricacies I find in the malt/yeast character. So much minerality and delicate yet dry and and rich flavors.

On tap at the brewery. Cloudy golden with medium white head. Malty, tad grassy, biscuit, nice bitterish finish. Nice mouthfeel. Spot on.

On tap at Fair Isle, pours a mostly clear blonde with a small white head. Aroma is full of grassiness, straw and biscuity malt. Flavour is crisp, with straw, biscuity malt, and grassy bitterness. Bitter, grassy, and herbal. Pleasant.
