Ingredients: Water, malted barley, malbec pomace, spelt, wheat, oats, yeast, hops, brettanomyces, lactic acid bacteria

We fermented this multigrain saison with a mixed culture of brewer’s yeast, Brettanomyces and lactic acid bacteria and aged it in oak barrels for two years before transferring it onto Malbec pomace from the Okanagan’s Painted Rock Winery for further conditioning. The result is intricate vinous flavours interwoven with the complex funk and tartness of a mixed-culture saison. The Malbec version delivers rich notes of deep red fruit and dry tannins.

On tap at The Magnet, pours a deep dark mahogany with a small pink head. Aroma has plenty of deep red wine notes, light oak, gentle wild yeast, and a touch of grape juice-like sugars. Flavour is bizarre, tasting like Kedem grape juice to me above anything else, with light bug and oak. Hmm, I can't shake that grape juice character. There's really not much complexity here. Too much residual sweetness, not enough grape skins, and not buggy enough to overwhelm the juiciness. Okay, but disappointing for me. I actually marginally prefer No. 4.

Poured from the tap @ Dageraad. Dark red with minimal pink head. Vinous, mild acidity, lighter bodied than I expected. Decent.

Darkish purple with a touch of haze. No head. Healthy malbec nose. Juicy, lots of malbec, big body, a bit of alcohol late. Not super complex but it has a good balance of acidity, sweetness and juiciness.

Draught at the brewery
Dark red colour, darker than Enology 4, with no head. Moderately vinous, but still showing the character of a sour, wild ale; the acidity is mild, the juice is strong; mild tannins in the finish; light acetic in the nose. This is bolder than the Enology 4. Good.

100ml. Appearance: dark purple with a rose head. Aroma: lots of red grapes, sweetness, some funk and tannins, manure, a bit of rustic notes. But grapes are definitely very dominant here. Taste: along the same lines, explosion of grapes, finishes with a bit of funk, rustic notes, light dryness, and a touch of tannins. Overall: very nice. I believe over time it should develop more funk in a bottle, decrease sweetness, and become a perfect beer.
