Three years ago, in a fit of mid-pandemic optimism, Mitch decided to stick something in barrels to release on our tenth anniversary. And now we get to enjoy the results of his optimism.
The first part of this beer was brewed with aged lambic-blend hops and aged in a barrel for three years. We blended in two slightly younger barrel-aged beers, to enhance the beer’s complexity and soften some rough edges.
It took us ten years to figure out how to do this. Wait’ll you see what we do at twenty.

On tap at The Magnet, pours a hazy bright golden with a medium white head. Aroma is complex, with lots of spicy yeast, black pepper, wild bugs, and oak. Flavour is buggy and woody, with lots of complex wild yeast, plenty of juniper (getting that Odd Society gin as well), some lightly tart pear, gentle spiciness, black pepper, and rustic notes. Nice mix of bugs and use of barrels. Good stuff.

Poured from the tap @ Dageraad. Lightly hazed gold with small white head. Feint citrus, some juniper, hint of cheese, light wood. Decent.

Pale and hazy, bubbly head. Woody nose, complex brett, and some lavender that tells me odd society gin. Woody on the palate, too, more of the gin, fairly big body and a good dose of bitterness. Clean pale malt. Good stuff.

Draught at the brewery,
Blond colour, slight haze; compact head. Buggy aroma, suggested acidity too. Dry, moderately acidic; it has an interesting fruity side to it, apricots, stone fruit; some astringency, and bitter grapefruit peel in the finish. To me, there's more Wild/Sour character than Saison, but it's quite complex, and very refreshing.

100ml. Appearance: hazy golden with a white head. Aroma: herbs, funk, rustic. Not sure why it reminds me Gin Barrel-Aged beers. Taste: along the same lines, funky, a bit fruity, noticeable hoppy bitterness. Overall: quite good, but not sure why I am not very impressed. Maybe because of the a bit unbalanced bitterness.
