Spontaneous Manifesto marks a milestone as The Monolith’s inaugural 100% Spontaneous Fermentation release. Made using historical methods developed in Belgium over generations, this blend of 1, 2 & 3 year barrels is our quintessential Spontaneous Fermentation blend. The result of these techniques is a unique product shaped by our local environment and indigenous microflora. It showcases classic stone fruit, apple and citric flavours and aromas with some bright red wine fruitiness, and subtle tannin, highlighted by a balanced acidity.

Bottle pour at Bottle Fest 2025. Pours clear blonde with a white head. Tons of musty old furniture and varnished wood on the nose. Flavour is super funky, lots of must and mildew, gentle tartness. Fantastic, complex spontaneous beer.

Bottle pour at the brewery. Pours hazy gold with a white head. Lots of old rotting wood and bugs on the nose. Flavour is quite dry and funky, lots of damp rotting wood, mildew. Fantastic.

Hazy, pale, with a medium head. Soft body and nice bugs. This has a fresh, bright acidity, mellow bugs, and is going in a refreshing direction.

Aug 12, 2025 (8/4/8/4/15=3.9): Poured from 750mL bottle (2023 vintage) @ Threefold (previously opened bottle). Hazy gold with small white head. Nice funky nose with feint barrel notes. Taste is same, but slightly more subdued, could be that it’s a pour from a previously opened bottle so likely has a touch of oxidation and loss of carbonation.

Nov 25, 2024 (7/4/7/4/16=3.8): Poured from 750mL bottle @ ABC beer share (with a lighter because the corkscrew broke off into the cork). Hazy yellow with small white head. Mild funk and oak, blends quite nicely, but prefer the 4 year version (Homage to the Old Ones). Still very nice.

750mL bottle, pours a hazy golden with a medium white head. Aroma is very complex, with lots of wild yeast, champagne-like effervescence, plenty of oak, and a touch of moderate funk. Flavour is no less complex, with a wonferful oak character, lots of wild yeast, barnyard funk and a touch of leather. Very effervescent, with an above average carbonation that works really well. Surprisingly close to that authentic lambic character. Excellent.
