Salt Spring Island Belle de Boskoop and Wolf River apples were co-fermented with a touch of Gamay grapes picked from a friend's vines on Salt Spring. Wild fermented, then bottle conditioned to carbonate. A dry cider overall, with notes of melon, citrus, strawberry, and marzipan.

Bottle pour at FHF 2024, pours a hazy dull blonde with a small white head. Aroma has gentle apple skins, a toxin of vinous notes, and very gentle funk. Flavour is crisp and vibrant, with lots of apple skins, some musty grape skins, and wild yeast. Cohesive and complex. Excellent.
