Mon Chester is a Mixed Fermentation blend featuring the unique characteristics of Sicilian red wine barrels. The beer is fermented in these incredibly flavorful barrels for 24 months which imparts a huge amount of the bright fruity flavours from these warm weather Sicilian red wines. These flavours caught the attention of our good friend Tom Chester so much that we named the beer after him. The result is a beer with bombastic raspberry fruitiness, juicy citrus, rose water aromatics, and candy like intensity. These flavours are highlighted by a bright, tart acidity and fleeting dry finish.

Soft body. Light. Juicy acidity makes for a great body, and there's decent fruit character in here as well.

Bottle pour at FHF 2024, pours a hazy bright golden yellow with a small white head. Aroma is peppery and musty, with a wonderful red wine grape must, plenty of funky wild yeast, and tannins. Flavour is full of tannins, red wine grape skins, tons of oak, and some black pepper. Complex, wonderfully incorporated of the grape skins. Musty, oaky, and grapey. Excellent.
