Saison with Green Rooibos Tea
We present one of our favorite summer crushers, Fyn. A light saison steeped with a green rooibos tea from Miro Tea, dried rose hips and pomegranate. Fyn is bright with aromas of strawberry fruit leather wrapped up in big notes of peaches, red berries, mangos and kiwis. Close your eyes and Fyn drinks like your favorite fruited summer ice tea! Available in lovely 12 oz cans, Fyn is a perfect companion for a hike or day the beach.

Hazy and pale. Thin head. Fruity, stone fruit vibes, a touch tannic, interesting rooibos vibes. Well-balanced.

Can, can't make out batch/date. Maybe batch 8? Late 2024 acquisition. Must be a late Summer 2024 can. Drunk 8/14/25.
Gently hazy, bright golden-maize. Small, white head, steadily to ring.
Good saison yeast with the adjuncts to follow. Nothing crude, and despite the commercial description, it's not dominated by them. Or maybe that's just bc it's aged. Pretty funky, yeasty stuff with biscuit and random grains.
Big saison character with stone fruit, plaster, soft pepper and chewy biscuit. Adjuncts follow, again, tasteful amd complementary. Not too much malt, acid, adjunct....lots of funk and rustic grain. Is there a bit of Brett fruitiness here too? Seems it. Great texture, attenuation and balance. Seems some age has done this very good.

On tap at Fair Isle, pours a cloudy blonde with a small white head. Aroma reveals vibrant pomegranate, lots of rustic saison yeast, and a touch of green tea. Flavour is tea-like, with a nice green tea character, lightly tart pomegranate, and rustic saison yeast. Weird adjuncts but used well. I'm on board.
