I have always found inspiration in the Belgian beer styles. I find the lore, history, and brewing techniques to be creative and passion driven. Belgian-style quadruple has been a long-time staple in my brewing catalogue. Ripple In Time is a blend of one batch of Belgian quad, Moulin, and a touch of barleywine. The blend presents bright notes of baking spice, candied figs, caramel, vanilla, and a touch of milk chocolate.

On tap at Vilaggio della Birra 2022. Dark brown with small tan head. Malty, caramel, toffee, dried fruit, raisins, some figs. Moderate sweetness. Medium to full bodied.

500ml bottle. Oaky, malty and caramely with some plums, figs, bourbon, toffee, syrup and hints of earthiness. Balanced.

Clube Bottle. Pours deep mahogany with a red tinge, small beige head, decent lacing. Aroma is obviously quad, candi sugars, Belgian yeast, figs, dates, bourbon, vanilla, brown sugar, port. Flavor is sweet, short of cloying, light plus bitter, heavy dark sugary malts and booziness. Full bodied, silky mouthfeel. Excellent quad. Top 5 for shore.

Poured from a 500 ml bottle. Aroma is super malt forward with lots of nice layers of dark caramel, toffee, toasted bread, burnt sugar and hints of nuts. Light notes of prune, raisin and fig. Light alcohol and oak notes. Pours a very dark brown, but not quite black with a medium small, medium thick, dark brown head that recedes quickly to the edges where it lingers. Light lacing and long legs. Flavor is fairly sweet with lots of caramel, toffee, burnt sugar and lighter notes of toasted bread and nuts. Moderate bitterness and medium alcohol warmth. Light raisin, prune and fig notes. Light oak and bourbon notes. Mouthfeel is fairly full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a solid beer but I'm not sure it's so much a quad as a barleywine. Really nice malt character with decent barrel notes.
