What if you combine a DIPA with Bourbon casks and dry hop it afterwards with Nelson Sauvin? When pouring, the fruity and white wine tones of the Neslon Sauvin immediately meet you. You will immediately encounter the same aromas at the first sip with in the background the tones of the bourbon barrel where vanilla and wood predominate.

Panda at home, thanks to Kenneth, 19/05/2025.
Deep copper to amber topped with a lasting beige head.
Nose is barrel first, caramel wafer, light bourbon nip, dried fruit esters.
Taste comprises caramel, old skool DIPA vibes, candied orange peel, bourbon nip but overlaid with a more complex wine barrel tang.
Medium bodied with bite, fine carbonation, semi drying close packing a balanced rising boost.
Fun sipper ... probably call this a strong ale stylistically over any DIPA!

Pretty much a clear amber beer, small bubbly cream colour head. Light palate, smooth, decent fine minerally carbonation emerging late on. Soft light malts, a little creamy sweetness and a touch of caramel go well with oak barrel induced vanilla. Tandy orange and marmalade, bright cooling pine. White wine tang mixing in well. Fruity bourbon barrel coming through late on. Light finish. Very interesting and engaging brew. Expecting the bourbon to dominate and whilst it certainly makes it's presence known, a big part is played by the white wine. Obvs, the hops are cracking on a bit, but enjoying the marmalade aspect. Solid and entertaining brew. Not sure about the dipa aspect but, then again, not sure where else you would put it.

opalescent chestnut to amber colour, large, dense yellowish ecru head; aroma of yeasty, grape peel, grape juice, soy sauce, resiny, white wine, some marzipan, apple peel, peaty and alcoholic-whisky notes; taste is the exact same with moderate acetic and some salty notes; good one, though for sure not a usual beer
