Le cidre AOP pays d’Auge est obtenu par la même technique que notre cidre brut ou doux. L’assemblage subtil de nos variétés issues de notre verger installé sur un sol argilo-calclaire propre au pays d’auge permet d’obtenir un cidre authentique, rappelant les cidres d’autrefois. La fermentation en bouteilles grâce aux levures indigènes nécessite une prise de mousse plus longue que nos cidres fermiers brut ou doux.

75cl bottle @ La Berteliere, Rouen. Pours clear gold High fuzzy carb, emerging caramelised fruit, lifting on the close with a dry floral finish. Nice but carb is a little too high.

750mL bottle, pours a clear golden with a small white head. Aroma has lots of barnyard funk, crisp apple skins, and a little apple core. Flavour is very vibrant, with champagne-like effervescence, crisp apple skins, and big barnyard funk. Super high carbonation, with a very dry and yet somehow sweet finish. Excellent.

750ml @ Matt's 🏡 (thx for this, Matt!) shared with Ryan during a Christmas gathering. Appearance: almost clear straw with some white head. Aroma: very dry and funky, some nice apples character here. Taste: surprisingly quite sweet instead of being bone-dry. Finishes with a lot of tannins, some funk. Overall: interesting and nicely made.

Poured from 750mL bottle. Clear gold with fizzy white head. Dry, with mild funk and a hint of sweet apple underlay. Enjoyable.

Clear golden colour with thin corona head from the strong carbonation. Initial funky farmyard aroma that mellows out after a while. Base notes are of sweetish apple juice. Back notes are more earthy and funky.
