We teamed up with Carl from Great Leap Brewing in Beijing and Nunzino from Hop Head Farms in Michigan to brew this saison with hops that were harvested less than 48 hours before we used them. We used a purposefully restrained hand and the gentlest extraction method we know in an effort to capture the unique character of freshly picked hops and delicately fold that character in the esters from our house yeast. The result is a striking integration of crushed cardamom, nutmeg, coriander, and pink peppercorn with fresh orange and grapefruit zest and a wisp of cedar.

Draft at Orange and Brew. Pours a slightly hazy gold color under a respectably frothy head that dwindles to leave some lace around the sides. The nose suggests some Belgian type malts, maybe some spelt and wheat. Taste seems to suggest lychees from hops? Not a typical taste. Light maltiness and still some hop bitterness. Just a little farmhouse funk.

On tap at The Beer Temple, pours a clear pale golden with a huge white head. Aroma has rustic saison yeast, light bugginess, and a touch of wet hops. Flavour has some phenolic notes, cleaner, rustic saison yeast, and a touch of bugs. Well, something didn�t go quite right here. The yeast seems messed up. Needs work.
