Certainly not a sour, nothing sour is evident. Brown, with lasting beige head. Nose is sweet with brown sugar overtones. Light sweet malt profile, again with brown sugar. Decent body for the style. Again no acetic quality whatsoever.

It’s been three months since the early release at Caskival and the brew has a new name. Those three months have helped A LOT. Hazy chestnut colour and impressively thick head. Vague aroma of nuts, chocolate and even lime - mole and a mojito? Gentle brett melds well with sweet nutty malts. Light on the toast. At this point, pretty well balanced - like a decent brown ale with a bit of bretty signature. Not what the brewer originally intended but it’s a pretty unique brew that does harken back to a bygone era of brewing.
Six months since brewing, at Caskival.
Chestnut brown. Not much head, but what is there is lasting. Smoked raisins, Ritter Sport dark and singed lettuce make for a bizarre aroma. Thin body. It has some dark cherry and oak notes like you want but they are underneath of some malt vinegar, caramel and diacetyl. Hmmm...it’s a bit sweet, too, with only a tiny splash of tartness. It’s definitely not ready yet, as the brett seems to have only just started working. By October, this should be hitting its stride a bit more...I hope. Ar 3 Ap 3 F 3 P 2 O 7 = 1.8
