For this special production of Bersalis Kadet the beer continues to age in wooden barrels after the main fermentation. For this purpose barrels were selected in which Oud Beersel’s Lambic beer has previously matured.
As the Pediococcus and Brettanomyces are present in both the barrel and the ambient air, the beer undergoes a second fermentation in the wooden barrels. This is how the Brett character develops and how fresh sourness is created in this light and bitter beer.
After 12 months of ripening in wooden barrels this unique beer undergoes a third fermentation in the bottle resulting in an optimal taste experience.

29 November 2019. At Billie's Craft Beer Fest. Cheers to the lovely Anke, tderoeck, 77ships & Ghent beer crew! Hazy golden, big, foamy, white head. Aroma of grapes, plum, straw, yeast, wood, herbs. Taste has sour plum, lemon, funky straw, sweet & bitter grapes in a woody & funky yeasty character. Dry, tart, grassy hoppy finish, lingering strong wood & grapes. Medium body, oily texture, soft carbonation. Elegant brew, woodiness galore.

Bottle thanks to Rasmusott. Pours darkish orange with a small white fizzy head. Aroma has sweet oak, light vinegary note to it, subtle brett, citrus. Taste is tart, oaky, lightly vinegary, bretty, citrussy, lightly weird curry-like note to it.

Lots of. Ice funky notes. Clear gold with a decent white head. Tart, apple, bit of rubber and a nice clean finish. Solid.

Bottle at 100 piv. Moderate lightstruck in aroma, light in taste Fortunately there is much more character present. Thin body, high carbonation. Med-high barnyardy funk, pretty clean. Easy drinking. Good but not great.
