Another Funked Up Belgian style saison finished with Brettanomyces. The grain bill includes Pilsner, Vienna and Munich malts. The addition of spelt provides a crisp, dry finish and 60# of honey gives it a complex sweetness and lighter body. We fermented with a Belgian Saison yeast and then tucked this away for 6 months in steel wine barrels where we added the juice of hundreds of pounds of cantaloupe and honeydew melons. Then inoculated the barrels with a wild yeast, Brettanomyces Bruxenellenis to eat the extra melon sugar and produce funky flavors. If that is not interesting enough we bottle and keg conditioned (naturally carbonated) the entire batch using only yeast, more honey and melon juice (that’s crazy stuff there folks). The resulting beer is fresh, fruity and funky.

75 cl bottle. Pours hazy yellow with a small white head. Aroma is yeasty and light peachy hoppy. Smooth fruity, mellow and light sweet ikpression. Bitter and slight peachy to mango fruity finish.

Bottle @ fonefan tasting. Nice head with good duration. Color is hazy golden. Aroma and taste are citrus, fruits, yeast, honey, brett and malt.

Big slightly fizzy mediumlasting head. Aroma is slightly fresh, citrus, yeast, flowers, hay, grass, yellow apples, alcohol, weeds, citrus peel. Taste is slightly harsh yeasty, citrus peel, yeast, weeds, flowers, hay, paper, leafs, minerals, grass, citrus. Medium bitterness, slightly harsh mouthfeel. Fair enough.

Bottle. Horseblanket and light lemon malt aroma. Golden yellow with giant white head. Funky barnyard and light lemon/melon malt flavor. Get more melon in the aftertaste. Brett dominates the other flavors but doesn’t quite overwhelm them. Very nice.

This was poured into a tulip.
The appearance was a nice golden bronzed orange color with a fairly large white head to start but eventually leveled to slim quarter finger. The lacing was slightly there and it slid into the beer.
The smell took a light peppery spice and added in a nice melon (honeydew?). Light honey enters in over top of a sort of an icy/somewhat refreshing quality of light funky but not overbearing lemon.
The taste took all of the previously mentioned flavors and added in a light white grape flavoring. She’s slightly sour around the edges but not overbearing, acceptable.
On the palate, this one sat about a light to medium on the body with a slight refreshing crisp carbonation running over my tongue. Sessionable? Perhaps, slightly.
Overall, this was a pretty good saison to have again. The nice somewhat refreshing qualities in the smell and taste make for a fairly nice night cap or make a nice dinner with a steak.

Bottle. Pours a cloudy orange yellow with small frothy white head that lasts. The aroma is yeast, honey, funk, and melon. Thin mouthfeel with nice fruity funk with nice brett and very lingering dry finish.
